Olivia Wilde called it her “crack” and Kathryn Budig said she’d even marry one :) Are you a fan of avocados as well?

Yogis in NYC are! At today’s Wanderlust Festival at Pier 63 in Chelsea, Avocados from Mexico gave away some avocado toast and sweet totes designed by the talented Claudia Pearson. Missed out? Not to fret, here’s the recipe. Perfect for parties, bbqs, and an easy healthy meal you can whip up in a few minutes in between downward facing dogs and runs to the juice bar. 

Grilled Avocado Toast

Ingredients:

4 slices of bread (I like Ezekial sprouted grain bread the best - and it’s gluten free!)

Organic extra-virgin olive oil

Juice of 1 lemon

1 large ripe avocado

1/4 tsp Himalayan Sea Salt

Crushed red pepper flakes, to taste

Directions:

Grill bread.

Sprinkle with olive oil

Combine avocado, lemon juice, and salt, and coarsely mash

Divide amongst the bread. Sprinkle with crushed red pepper flakes.
